Today, at the restaurant "Naturalmente Nacci", I am going to attend a tasting of some dishes prepared by Chef Andrea Nacci, paired with ARS AVI Organic Extra Virgin Olive Oil.
There are all the premises for an excellent experience. Let's meet the protagonists.
Andrea Nacci was born in Cassino (FR), Italy, in 1981. After attending the Hotel Management School in Cassino, he started his professional activity in prestigious hotels and starred restaurants, such as Perbellini, Don Alfonso, San Pietro di Positano, Malga Panna, Cafè le Paillotes, Four Seasons Prague and in 2005 he arrived at the Grand Hotel Principe di Piemonte as the chef of the restaurant “Il Piccolo Principe”. The restaurant, with Andrea as a chef, has achieved important recognitions, and has been inserted with excellent remarks in the most prestigious guides, such as Gambero Rosso and Espresso, and was even awarded the Michelin Star in November 2008.
In 2011 Andrea returned to his beloved country to make the dream of his life come true: to start his own restaurant together with his family.
Andrea loves creative cuisine, yet traditional at the same time, which does not alter the taste of the products. His professional point of reference is the famous Chef Alain Ducasse, he is inspired by his humility and expertise.
ARS AVI and Extra Virgin Olive Oil “B”.
ARS AVI was founded in 1950, born from the passion of Alberto Petrecchia's, the "grandfather", who planted and took over the trees of the Leccino, Frantoio and Moraiolo olive cultivars in San Vittore del Lazio, to process them in his olive oil mill in the province of Frosinone. Handed down to his son Fabrizio, ARS AVI represents nowadays a business reality that, thanks to the high professionalism and the innovative technologies introduced, offers premium quality extra virgin olive oil on the market.
ARS AVI Organic Extra Virgin Olive Oil "B" is produced from Leccino, Frantoio and Moraiolo olives, collected, selected and cold pressed within the next 6 hours from picking, in the company state-of-the-art mill, without any filtration process, so as to obtain a premium quality oil of golden-green colour and fruity aroma.
B Oil is marketed in a ceramics bottle, particularly valuable and aesthetically appealing. The bottle may be reused and filled with other oils from recyclable cans.
The halls of the Naturalmente Nacci are very comfortable and functional.
They are very well arranged, with a view on the garden and over the hills of the Ciociaria, and guests will be able to appreciate the beauty of these places.
The halls may accommodate any kind of ceremony, conference, congress, meetings, thanks to the different capabilities, possibilities of arrangement of the tables and available equipments.
Andrea, his brother Angelo (a sommelier) and Alberto Petrecchia -the grandson of the founder- welcome us at the restaurant.
An unconventional experience: the "personalized" oil
Andrea Nacci tells us about his first experience with the ARS AVI oil. He remembers how about 4 years ago, Fabrizio Petrecchia invited him to visit the farming company and in particular the new oil mill.
Andrea was stunned by the location of the farm (with a splendid view on the valley below) and by the cutting edge machineries and the high-level business management. Also, he was impressed by the people's helpfulness: Fabrizio in fact encouraged him to choose the olives from which he would obtain the oil that he was about to taste on the spot. Andrea, astonished, accepted and one hour later he could taste the oil pressed from the very olives he had selected. Andrea recalls: "I tasted a fresh-pressed oil, prepared under my eyes. What a fragrance!".
But there is more. After some test at the restaurant, Andrea asked Fabrizio about the possibility to obtain a more delicate and sweet oil, that could be better combined with the kind of dishes that he cooks. Further to a few tries, the required oil was achieved: a personalized oil. In addition, by storing the processing parameters set, ARS AVI is able to reproduce the same typology of oil over the time.
"I am proud to collaborate with a company that is willing to meet the requirements of the customer so much that they even venture to the personalization of the product!" Andrea says. "It is a clear sign of a real attention that goes beyond the purely economic aspect".
For this reason, Andrea Nacci mainly uses the Extra Virgin Olive Oil B.

Raw coloured flavours of the sea
Cappelletti made of flour of crushed Taralli, stuffed with burrata, turbot fillets and wild fennel powder.
Squids filled with salted codfish in creamed in chive, crunchy chickpeas a scent of basil.
